Prepare the Ingredients
Slice the beef, red and green bell peppers, and bamboo shoots. Set aside.

Add Curry Paste
Add the Thai green curry paste to the pan and stir well to coat the beef. Cook for another 2 minutes to release the flavors.

Add Coconut Milk
Pour in the coconut milk and stir to combine. Bring the mixture to a gentle simmer.

Add Vegetables
Add the bamboo shoots and sliced bell peppers to the pan. Let it simmer for an additional 5-7 minutes until the vegetables are tender.

Season the Curry
Stir in the fish sauce and sugar. Taste and adjust seasoning as needed.

Add Thai Basil
Remove the pan from heat and stir in the fresh Thai basil leaves just before serving.

Serve hot with steamed rice or noodles.
