Chicken Preparation

    Prepare the Chicken

    Preheat your oven to 325°F (160°C). Pat the whole chicken dry with paper towels. In a bowl, mix together salt, black pepper, garlic powder, onion powder, cumin, coriander, turmeric, paprika, and brown sugar.

    Season the Chicken

    Rub the spice mixture all over the chicken, including under the skin. Drizzle lime juice over the top and rub it in.

    Roast the Chicken

    Place the chicken on a roasting pan and roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (75°C).

House Barbecue Sauce Preparation

    Mix Ingredients

    In a saucepan, combine ketchup, brown sugar, soy sauce, rice vinegar, garlic powder, smoked paprika, chili flakes, and water.

    Cook the Sauce

    Heat over medium heat, stirring occasionally, until the sauce begins to simmer. Reduce heat and let it cook for about 15 minutes, stirring occasionally.

Serving

    Serve the Chicken

    Once the chicken is fully roasted, let it rest for 10 minutes before carving. Serve with the house barbecue sauce on the side.
