    Prepare the Ingredients

    Slice the chicken breast into thin strips. Chop the red bell pepper into thin slices. Rinse the snap peas and cut the bamboo shoots into matchsticks. Tear the kaffir lime leaves into smaller pieces.

    Sauté the Chicken

    In a large pan or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes.

    Add Vegetables

    Add the bamboo shoots, red bell pepper, and snap peas to the pan. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.

    Add Sauce

    Stir in the Thai red curry paste and cook for 1 minute until fragrant. Then, pour in the coconut milk, fish sauce, and sugar. Mix well and let it simmer for another 2-3 minutes.

    Finish with Herbs

    Add the fresh Thai basil and kaffir lime leaves to the pan. Stir to combine and cook for an additional minute until the herbs are wilted.

    Remove from heat and serve hot over steamed rice or noodles.
