    Prepare the Ingredients

    Gather all the ingredients. Dice the chicken breast, slice the bamboo shoots and bell pepper, and wash the Thai basil leaves.

    Cook the Chicken

    In a large pan or wok, heat the vegetable oil over medium heat. Add the diced chicken and cook until it is no longer pink, approximately 5-7 minutes.

    Add the Curry Paste

    Stir in the Thai red curry paste and cook for 2 minutes, allowing the spices to become fragrant.

    Combine Coconut Milk

    Pour in the coconut milk and stir well. Bring the mixture to a gentle simmer.

    Add Bamboo Shoots and Bell Peppers

    Add the sliced bamboo shoots and bell pepper to the pan. Continue to simmer for about 5 minutes, until the vegetables are tender.

    Season the Curry

    Stir in the fish sauce and sugar, adjusting to taste. Let it simmer for an additional 2 minutes.

    Remove from heat and stir in the fresh Thai basil leaves before serving.
