Prepare the Oysters

    Prepare the Breading Station

    In one bowl, mix the cornmeal, flour, Cajun seasoning, salt, and black pepper. In another bowl, whisk the eggs and buttermilk together.

    Bread the Oysters

    Dip each oyster in the buttermilk mixture, then dredge in the cornmeal mixture, ensuring they are well coated.

Fry the Oysters

    Heat the Oil

    In a deep skillet, heat the vegetable oil over medium-high heat until hot.

    Fry the Oysters

    Carefully add the breaded oysters to the hot oil and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Assemble the Po'Boy

    Toast the Rolls

    Lightly toast the hoagie rolls if desired.

    Build the Sandwich

    Layer the fried oysters on the bottom half of the hoagie rolls, top with lettuce and tomato slices. Drizzle with tartar or cocktail sauce and finish with the top half of the roll.

    Serve the Po'Boy with lemon wedges on the side.
