Crab Claws
Method
Preparation and Cooking
- 1
Prepare the Crab Claws
Rinse the crab claws under cold water and pat them dry with paper towels.
- 2
Set Up the Breading Station
In a shallow bowl, mix together the all-purpose flour, cornmeal, salt, black pepper, and cayenne pepper. In another bowl, whisk the eggs and milk together.
- 3
Bread the Crab Claws
Dip each crab claw first into the egg mixture, allowing any excess to drip off, then coat it in the flour mixture, pressing gently to adhere. Set aside on a plate.
- 4
Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until shimmering but not smoking.
- 5
Fry the Crab Claws
Carefully add the breaded crab claws to the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes on each side, or until golden brown and crispy.
- 6
Drain and Serve
Remove the fried crab claws from the oil and drain on paper towels. Serve hot, with your choice of dipping sauce.
