    Prepare the Ingredients

    Dice the bell pepper, onion, celery, and garlic. Slice the okra and green onions. Cut the chicken breast into bite-sized pieces.

    Cook the Sausage

    In a large pot, brown the Andouille sausage over medium heat until slightly crispy. Remove and set aside.

    Sauté the Vegetables

    In the same pot, add the diced onion, bell pepper, celery, and garlic. Sauté for about 5 minutes until softened.

    Add Chicken and Spices

    Add the chicken pieces to the pot along with the Cajun seasoning, salt, and black pepper. Cook until the chicken is no longer pink.

    Combine Remaining Ingredients

    Stir in the diced tomatoes, chicken broth, okra, bay leaves, and the browned sausage. Bring to a boil.

    Simmer the Gumbo

    Reduce heat to low and let the gumbo simmer for 30-40 minutes, stirring occasionally.

    Add Shrimp

    In the last 5 minutes of cooking, add the shrimp and cook until they turn pink.

    Remove bay leaves before serving. Serve the gumbo over cooked rice and garnish with sliced green onions.
