Cooking Instructions

  1. 1

    Caramelize the Onions

In a large pot, heat the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized, about 30-40 minutes.

  2. 2

    Add Broth and Wine

Once the onions are caramelized, add the dry white wine and cook for an additional 5 minutes. Then add the beef broth, bay leaves, thyme, salt, and black pepper. Bring to a boil, then reduce the heat and let simmer for about 20 minutes.

  3. 3

    Prepare the Bread

While the soup is simmering, slice the French baguette into thick slices and toast them until golden brown.

  4. 4

    Serve the Soup

Remove the bay leaves from the soup. Ladle the soup into oven-safe bowls, top each bowl with a slice of toasted baguette, and sprinkle with Provolone cheese.

  5. 5

    Melt the Cheese

Place the bowls under the broiler for 2-3 minutes or until the cheese is melted and bubbly. Serve hot.
