Season the Filet Mignon
Coat the filet mignon with olive oil and generously sprinkle Cajun seasoning on all sides.

Blacken the Steak
Preheat a skillet over high heat. Once hot, add the seasoned filet mignon and sear for about 3-4 minutes on each side, or until a nice crust forms.

Melt the Bleu Cheese
In the last minute of cooking, place the bleu cheese on top of the filet mignon and cover the skillet to allow the cheese to melt.
Serving

Plate the Filet Mignon
Remove the filet from the skillet and let it rest for a couple of minutes before slicing. Serve warm with any sides of your choice.
