Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips (about 1/4 inch thick) to form fries.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch. This helps achieve a crispier texture.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain and pat the fries dry with paper towels. Carefully add them to the hot oil in batches, frying for about 4-5 minutes until golden and crispy. Remove with a slotted spoon and drain on paper towels.

Coat with Truffle Butter
While the fries are still hot, melt the truffle butter and drizzle it over the fries. Toss to coat evenly.

Add Parmesan and Salt
Sprinkle the shaved parmesan cheese and salt over the fries and toss gently to combine.

Serve the truffle fries hot with garlic aioli on the side for dipping.
