Preparation and Cooking

Prepare the Potatoes

Wash and peel the Russet potatoes. Cut them into thin strips to form fries.

Soak the Fries

Soak the cut fries in water for at least 30 minutes to remove excess starch.

Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes

Fry the soaked and drained potatoes in batches for about 5-7 minutes until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.

Coat with Truffle Butter

In a large bowl, toss the hot fries with truffle butter and salt to taste.

Serve

Plate the fries and generously sprinkle with shaved Parmesan cheese. Serve immediately with garlic aioli on the side.
