Rainbow Sprinkle Cake Recipe

This is not your bake-at-home sprinkle cake! This three-layered dessert is made with cake-batter-flavored white cake, vanilla-flavored buttercream and lots and lots of rainbow sprinkles – inside and out.

Cake Preparation and Assembly

    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

    Cream Butter and Sugar

    In another bowl, cream the softened butter until light and fluffy. Gradually add the sugar and continue to beat until well combined.

    Add Eggs and Vanilla

    Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

    Combine with Dry Ingredients

    Alternately add the dry mixture and buttermilk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined. Fold in the rainbow sprinkles.

    Bake the Cakes

    Divide the batter evenly among the three prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

    Cool the Cakes

    Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

    Prepare the Buttercream

    In a large bowl, beat the heavy cream until soft peaks form. Gradually add powdered sugar and continue beating until stiff peaks form.

    Assemble the Cake

    Place one cake layer on a serving plate. Spread a layer of buttercream on top, then repeat with the second layer. Add the final layer on top.

    Frost and Decorate

    Frost the top and sides of the cake with the remaining buttercream. Decorate the top and sides with additional rainbow sprinkles.
