Prepare the Sweet Potatoes

Preheat the oven to 400°F (200°C). Toss the diced sweet potatoes in olive oil, salt, and pepper, and spread them on a baking sheet. Roast for 25-30 minutes until tender and slightly caramelized.

Cook the Quinoa

While the sweet potatoes are roasting, rinse the quinoa under cold water. Combine 1 cup of quinoa with 2 cups of water in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork and set aside.

Assemble the Bowl

In a large bowl, combine the chopped kale, mixed greens, roasted sweet potatoes, cooked quinoa, chickpeas, crumbled goat cheese, sliced almonds, and mixed berries.

Add the Protein

Top the salad with your choice of protein (grilled chicken, tofu, or beans).

Prepare the Dressing

In a small bowl, whisk together 3 tablespoons of maple syrup, 2 tablespoons of balsamic vinegar, salt, and pepper to taste.

Serve

Drizzle the maple balsamic dressing over the power bowl, toss gently to combine, and serve immediately.
