Char the Corn
In a skillet over medium-high heat, add the fresh corn kernels and cook until they are slightly charred, about 5-7 minutes. Stir occasionally to ensure even cooking.

Mix the Base
In a large mixing bowl, combine the mayonnaise, sour cream, lime juice, chili powder, garlic powder, and salt. Mix well until all ingredients are fully combined.

Combine Ingredients
Add the charred corn and crumbled cotija cheese to the bowl. Stir gently to combine, being careful not to break the corn kernels.

Garnish
Top the dip with chopped cilantro and additional crumbled cotija cheese if desired.

Serve
Serve immediately with fresh hand-cut tortilla chips or refrigerate for up to an hour before serving to let the flavors meld.
