Prepare the Dough
In a large bowl, dissolve the yeast and brown sugar in warm water. Let it sit for about 5 minutes until frothy. Add salt and gradually mix in the flour until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour or until doubled in size.

Shape the Pretzel
Preheat the oven to 450°F (232°C). Punch down the dough and shape it into a large pretzel. Place on a parchment-lined baking sheet.

Boil the Pretzel
In a large pot, bring 10 cups of water to a boil and add baking soda. Carefully lower the pretzel into the boiling water for 30 seconds, then remove and place back on the baking sheet.

Bake the Pretzel
Bake in preheated oven for 12-15 minutes or until golden brown.

Make the Cheese Sauce
In a saucepan over medium heat, combine heavy cream and cheeses. Stir until melted and smooth. Season with garlic powder and salt to taste.
