    Prepare the Vegetables

    Chop the onions, carrots, bell pepper, and potatoes into small, uniform pieces. Rinse the split peas under cold water and set aside.

    Sauté the Onions

    In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until they are translucent, about 5 minutes.

    Add Vegetables and Broth

    Add the diced carrots, bell pepper, and potatoes to the pot. Stir to combine, then pour in the vegetable broth. Bring to a boil.

    Cook the Soup

    Once boiling, add the rinsed split peas. Reduce the heat to low, cover, and let it simmer for about 30-40 minutes, or until the split peas and vegetables are tender.

    Once the soup is cooked, season with salt and black pepper to taste. Stir in the fresh parsley just before serving.
