Make the Dough
In a large bowl, mix flour and salt. Make a well in the center and add the egg and water. Mix until a dough forms, then knead on a floured surface for about 5 minutes until smooth. Cover with a cloth and let it rest for 30 minutes.

Shape the Pierogies
Divide the dough into small balls. Roll each ball out into a circle about 1/8 inch thick. Place a spoonful of potato filling in the center, fold the dough over, and pinch the edges to seal.

Cook the Pierogies
Bring a large pot of salted water to a boil. Drop the pierogies in batches and cook until they float to the surface, about 3-4 minutes. Remove with a slotted spoon and drain.

Serve
Plate the pierogies, top with chopped bacon and fried onions, and serve with a dollop of sour cream.
