Make the Dough
In a large mixing bowl, combine the flour and salt. Make a well in the center, add the egg, and gradually mix in water until a dough forms. Knead for about 5-7 minutes until smooth. Cover and let rest for 30 minutes.

Roll and Fill the Dough
Divide the dough into small pieces and roll out each piece into a thin circle. Place a spoonful of the potato filling in the center of each circle, fold the dough over, and pinch the edges to seal.

Cook the Pierogies
Bring a large pot of salted water to a boil. Drop the pierogies in batches and cook for about 3-5 minutes or until they float to the surface. Remove with a slotted spoon.

Serve
Top the cooked pierogies with sautéed onions and crumbled bacon. Serve with sour cream on the side.
