    Make the Dough

    In a large mixing bowl, combine the flour and salt. Make a well in the center, add the egg, and gradually mix in water until a dough forms. Knead for about 5-7 minutes until smooth. Cover and let rest for 30 minutes.

    Prepare the Filling

    Peel and boil the potatoes in salted water until tender. Drain and mash the potatoes. Season with black pepper and set aside to cool.

    Roll and Fill the Dough

    Divide the dough into small pieces and roll out each piece into a thin circle. Place a spoonful of the potato filling in the center of each circle, fold the dough over, and pinch the edges to seal.

    Cook the Pierogies

    Bring a large pot of salted water to a boil. Drop the pierogies in batches and cook for about 3-5 minutes or until they float to the surface. Remove with a slotted spoon.

    Prepare the Toppings

    In a skillet, cook the bacon until crispy. Remove and crumble. In the same skillet, sauté the chopped onion until golden brown.

    Top the cooked pierogies with sautéed onions and crumbled bacon. Serve with sour cream on the side.
