Marinara Sauce

Method

Calamari Preparation

  1. 1

    Prepare the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels.

  2. 2

    Make the Breading Mixture

In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

  3. 3

    Dip in Buttermilk

Pour buttermilk into another bowl. Dip the calamari rings into the buttermilk, allowing excess to drip off.

  4. 4

    Coat with Breading

Take the buttermilk-dipped calamari and coat them in the flour mixture. Make sure they are evenly coated.

  5. 5

    Heat the Oil

In a deep pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

  6. 6

    Fry the Calamari

Fry the coated calamari in batches for about 2-3 minutes or until golden brown. Do not overcrowd the pan.

  7. 7

    Drain and Serve

Remove the fried calamari and place them on a plate lined with paper towels to drain excess oil. Serve hot.

Marinara Sauce Preparation

  1. 8

    Cook the Garlic

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

  2. 9

    Add Tomatoes and Seasonings

Add the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar to the saucepan. Stir to combine.

  3. 10

    Simmer the Sauce

Bring the sauce to a simmer. Reduce heat and let it cook for about 15-20 minutes, stirring occasionally.

  4. 11

    Adjust Seasoning

Taste the marinara sauce and adjust seasoning if necessary. Remove from heat and keep warm until serving.
