Mousse Preparation

Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a double boiler or in the microwave. Stir until smooth and let it cool slightly.

Whip the Heavy Cream
In a large bowl, pour 300 ml of heavy cream and whip it using an electric mixer until it forms soft peaks. Set aside.

Beat the Egg Whites
In another clean bowl, beat the egg whites until they become frothy. Gradually add the granulated sugar and continue beating until stiff peaks form.

Combine Mixtures
Gently fold the melted chocolate into the whipped cream until well combined. Then, carefully fold in the beaten egg whites, being cautious not to deflate the mixture.

Add Vanilla
Finally, add the vanilla extract and gently mix until incorporated.

Chill the Mousse
Spoon the mousse into serving dishes and refrigerate for at least 2 hours or until set.
Whipped Cream Topping Preparation

Whip the Heavy Cream
In a separate bowl, pour 100 ml of heavy cream and whip it until soft peaks form.

Add Sugar and Vanilla
Add the powdered sugar and vanilla extract to the whipped cream and continue whipping until stiff peaks form.

Serve
Once the mousse has set, top each serving with a dollop of whipped cream.
