Main Dish

Raita (Yogurt Sauce)

Method

Main Dish Preparation

  1. 1

    Marinate the Lamb

In a large bowl, combine lamb pieces with yogurt, ginger-garlic paste, Kashmiri red chili powder, garam masala, and salt. Mix well and let it marinate for at least 1 hour, preferably overnight in the refrigerator.

  2. 2

    Prepare the Rice

Rinse basmati rice under cold water until the water runs clear. Soak in water for 30 minutes, then drain.

  3. 3

    Cook the Lamb

In a large pot, heat ghee over medium heat. Add finely sliced onions and sauté until golden brown. Add the marinated lamb and cook until browned on all sides.

  4. 4

    Add Water

Pour in 4 cups of water, bring to a boil, then reduce heat to low, cover, and simmer for 1 hour, or until the lamb is tender.

  5. 5

    Add Rice

Once the lamb is cooked, layer the soaked and drained rice over the lamb in the pot. Add more water if necessary to ensure the rice is covered. Cover tightly and cook on low heat for 20-25 minutes or until the rice is done.

  6. 6

    Finish the Dish

Gently fluff the rice and lamb mixture with a fork. Sprinkle with chopped coriander and mint before serving.

Raita Preparation

  1. 7

    Prepare the Yogurt

In a medium bowl, combine the yogurt with grated cucumber, cumin powder, and salt. Mix well until smooth.

  2. 8

    Garnish

Fold in the chopped fresh coriander to the yogurt mixture. Adjust seasoning as per taste.
