Prepare the Lobster Filling

    Cook the Lobster

    If using live lobsters, steam or boil them for about 10-15 minutes until they turn bright red. Remove from heat, let cool, and extract the meat.

    Mix Ingredients

    In a mixing bowl, combine the lobster meat, mayonnaise, finely chopped celery, lemon juice, Dijon mustard, salt, black pepper, and chives. Stir until well mixed.

    Chill the Filling

    Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Prepare the Bread

    Butter the Buns

    Spread unsalted butter on the outside of each New England-style hot dog bun.

    Toast the Buns

    In a skillet over medium heat, toast the buttered buns until golden brown on both sides, about 2-3 minutes per side.

Assemble the Lobster Rolls

    Layer the Lettuce

    Place a lettuce leaf inside each toasted bun to create a bed for the lobster filling.

    Fill with Lobster Mixture

    Spoon the chilled lobster filling generously into each bun on top of the lettuce.

    Sprinkle a little paprika over the top of the lobster filling for color and flavor.
