    Prepare the Steak

    Take the ribeye steaks out of the refrigerator about 30 minutes before cooking to bring them to room temperature. Pat them dry with paper towels.

    Season the Steak

    Rub both sides of the steaks with olive oil, garlic powder, salt, and black pepper. Make sure to coat evenly.

    Cook the Steak

    In a large skillet over medium-high heat, add the seasoned steaks. Cook for about 4-5 minutes on each side for medium-rare, adjusting the time for desired doneness. Add butter and fresh rosemary in the last minute, basting the steaks with melted butter.

    Rest the Steak

    Remove the steaks from the skillet and let them rest for 5-10 minutes before slicing.

    Prepare the Potatoes

    Peel the russet potatoes and cut them into long strips about 1/4 inch thick. Soak them in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot, heat the vegetable oil over medium-high heat until it reaches 325°F (160°C). Use a thermometer to ensure correct temperature.

    Fry the Potatoes

    Drain and pat dry the soaked potatoes. Working in batches, fry the potatoes in the hot oil for about 5-6 minutes until they are soft but not browned. Remove and drain on paper towels.

    Final Fry

    Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for another 3-4 minutes until golden brown and crispy. Drain on paper towels and sprinkle with salt and parsley.
