    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Place them in a pot of salted water and bring to a boil. Cook until fork-tender, about 15 minutes. Drain and mash the potatoes in a large mixing bowl.

    Sauté Onion and Garlic

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes, until translucent. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.

    Combine Filling Ingredients

    Add the sautéed onion and garlic to the mashed potatoes. Stir in the ground cumin, salt, and black pepper until well combined. Taste and adjust seasoning as needed.

    Assemble Tacos

    Warm the corn tortillas in a dry skillet for about 30 seconds on each side to make them pliable. Place a generous spoonful of the potato filling in the center of each tortilla. Fold the tortilla in half, encasing the filling, and press gently to seal.

    In a large skillet, heat about 2 cups of oil over medium-high heat until shimmering. Carefully place the filled tacos in the hot oil, frying them until golden brown and crispy, about 3-4 minutes per side. Remove from oil and drain on paper towels.
