    In a medium bowl, combine the soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger. Whisk until the sugar is dissolved and the mixture is well combined.

    Marinate Chicken

    Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for best results.

    Prepare Vegetables

    While the chicken is marinating, wash and slice the bell peppers and julienne the carrot. Chop the green onions and set aside.
