Preparation and Cooking

    Marinate the Chicken

    In a large bowl, combine the gochujang, soy sauce, sesame oil, minced garlic, grated ginger, brown sugar, and black pepper. Mix well until you have a smooth marinade.

    Add Chicken to Marinade

    Add the chicken thighs to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for best flavor.

    Prepare for Grilling

    Heat a grill or grill pan over medium-high heat. If using an outdoor grill, make sure the coals are hot and ready.

    Grill the Chicken

    Remove the chicken from the marinade and place it on the grill. Cook for about 6-8 minutes per side, or until the chicken is charred and cooked through, with an internal temperature of 75°C (165°F).

    Garnish and Serve

    Once cooked, remove the chicken from the grill and let it rest for a few minutes. Garnish with chopped green onions and sesame seeds before serving.
