Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crisscross pattern, being careful not to cut into the meat.

Season the Pork
In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub this mixture all over the pork belly, making sure to get it into the scored skin.

Sear the Pork Belly
In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the pork belly skin-side down and sear for about 5-7 minutes until the skin is crispy.

Roast in the Oven
Flip the pork belly over and sprinkle with fresh herbs. Transfer the skillet to the preheated oven and roast for 2-2.5 hours, or until the meat is tender and the skin is crispy.

Rest and Serve
Remove the pork belly from the oven and let it rest for about 15 minutes before slicing. Serve warm, and enjoy!
