Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 2

    Clean the Mushrooms

Wipe the Portobello mushrooms with a damp cloth to remove any dirt. Remove the stems and set them aside.

Stuffing Preparation

  1. 3

    Make the Stuffing

In a mixing bowl, combine the cream cheese, minced garlic, chopped parsley, chopped chives, salt, black pepper, and half of the Parmesan cheese. Mix until well combined and creamy.

  2. 4

    Chop Mushroom Stems

Finely chop the mushroom stems that were set aside and add them to the stuffing mixture. Stir well.

Stuffing the Mushrooms

  1. 5

    Fill the Mushrooms

Using a spoon, generously fill each Portobello mushroom cap with the stuffing mixture, pressing down slightly to pack it in.

Baking

  1. 6

    Prepare for Baking

Place the stuffed mushrooms on a baking sheet lined with parchment paper. Drizzle olive oil over the tops of the mushrooms and sprinkle the remaining Parmesan cheese on top.

  2. 7

    Bake the Mushrooms

Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.

Serving

  1. 8

    Serve Hot

Remove from the oven and let cool for a few minutes. Serve the stuffed mushrooms warm as an appetizer or side dish.
