Prepare the Croutons
Preheat your oven to 375°F (190°C). Cut the sourdough bread into bite-sized cubes and place them in a bowl. Drizzle with olive oil, garlic powder, salt, and black pepper. Toss to coat evenly. Spread the croutons on a baking sheet and bake for 10-12 minutes until golden brown and crispy. Set aside to cool.
Make the Dressing
In a small bowl, whisk together lemon juice, anchovy paste, Dijon mustard, Worcestershire sauce, and olive oil. Season with salt and black pepper to taste. Adjust the seasoning as needed.
Assemble the Salad
Wash and dry the hearts of romaine. Cut them into halves or quarters. In a large bowl, combine the romaine with the dressing and toss to coat. Add the croutons and toss gently. Top with grated Parmesan cheese and serve immediately.
