Make the Banana Cake

Preheat the oven to 350°F (175°C). In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Mash the ripe bananas and mix them into the wet ingredients along with the vanilla extract.

Prepare the Caramelized Bananas

In a skillet over medium heat, melt the butter and add the brown sugar. Stir until the sugar is dissolved, then add the sliced bananas and cook for about 2-3 minutes until caramelized. Set aside.

Make the Chocolate Ganache

Heat the heavy cream in a small saucepan until just boiling. Pour it over the chopped dark chocolate in a bowl and let it sit for a minute. Stir until smooth and glossy.

Assemble the Cake

Once the banana cake has cooled, spread a layer of caramel mousse over the top, followed by the caramelized bananas. Drizzle the chocolate ganache over everything, then finish with a drizzle of caramel sauce.
