Make the Dough

In a large bowl, mix the flour, sugar, and salt. Add the diced butter and mix until the mixture resembles coarse crumbs. Stir in ice water, one tablespoon at a time, until the dough forms a ball. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Prepare the Apples

In another bowl, toss the sliced apples with brown sugar, cinnamon, and lemon juice. Set aside to let the flavors meld.

Roll Out the Dough

Preheat the oven to 400°F (200°C). Roll out the chilled dough on a floured surface into a 12-inch circle. Transfer to a baking sheet lined with parchment paper.

Assemble the Galette

Arrange the apple mixture in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the apples, pleating it as you go. Brush the dough with the beaten egg.

Bake

Bake for 25-30 minutes or until the apples are tender and the crust is golden brown. Let cool slightly.

Make the Caramel

In a saucepan over medium heat, melt the sugar until it turns amber in color, swirling the pan to ensure even melting. Remove from heat and carefully stir in the butter until melted. Gradually whisk in the heavy cream until smooth. Stir in the salt and let cool.

Serve the Galette

Slice the apple galette and serve warm with a scoop of caramel gelato on top. Drizzle with salted caramel sauce before serving.
