Mochi Dough
Ice Cream Filling
Method
Prepare the Mochi Dough
- 1
Mix Dry Ingredients
In a mixing bowl, combine sweet rice flour and sugar.
- 2
Add Water
Gradually add water to the dry ingredients, stirring until smooth. If desired, add food coloring to achieve your preferred color.
- 3
Cook the Mixture
Transfer the mixture to a microwave-safe bowl and cover with plastic wrap. Microwave on high for 1 minute, stir, then microwave for another 1 minute. Stir again and microwave for an additional 30 seconds until the dough is translucent.
- 4
Cool the Dough
Let the mochi dough cool for a few minutes until it can be handled.
Assemble Mochi Ice Cream
- 5
Prepare Ice Cream
Scoop the softened ice cream into small balls (about 1-2 tablespoons each) and place them on a parchment-lined tray. Freeze until solid.
- 6
Shape Mochi Around Ice Cream
Dust a clean surface with cornstarch. Take a small portion of the mochi dough and flatten it into a disc. Place an ice cream ball in the center and wrap the mochi around it, sealing it well. Repeat with remaining ice cream and mochi dough.
- 7
Freeze the Mochi Ice Cream
Place the finished mochi ice cream balls back on the parchment-lined tray and freeze again for at least 2 hours before serving.
