Prepare the Broth
In a large pot, combine pork bones and water. Bring to a boil, then reduce heat and simmer for at least 12 hours, skimming off any impurities that rise to the surface.

Cook the Pork Belly
In a separate pot, simmer the pork belly in water for about 1 hour until tender. Remove, let cool, and slice into thin pieces.

Prepare the Noodles
Cook ramen noodles according to package instructions. Drain and set aside.

Assemble the Ramen Bowl
In a bowl, add a serving of noodles. Pour hot broth over the noodles and top with sliced pork belly, bean sprouts, bamboo shoots, pickled ginger, and chopped scallions.

Finish with Black Garlic Oil
Drizzle black garlic oil over the top of the assembled ramen bowls for added flavor.

Season and Serve
Add soy sauce, mirin, and salt to taste. Serve hot and enjoy your Hakata Tonkotsu Ramen!
