Prepare the Wonton Chips
Preheat your oven to 350°F (175°C). Cut wonton wrappers into triangles and place them on a baking sheet. Lightly brush with oil and sprinkle with salt. Bake for 8-10 minutes until crispy and golden.

Prepare the Hamachi Tartare
Finely dice the Hamachi and place it in a bowl. Add soy sauce, truffle oil, lime juice, salt, and black pepper. Mix gently to combine.

Prepare the Garnishes
Dice the avocado and chop the green onions. Set aside.

Assemble the Nachos
On a serving plate, arrange the wonton chips. Top with the hamachi tartare, diced avocado, chopped green onions, and sesame seeds.
