    Prepare the Filling

    In a large mixing bowl, combine ground chicken, finely chopped leeks, minced ginger, minced garlic, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are fully integrated.

    Assemble the Gyoza

    Take a gyoza wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges of the wrapper with water using your finger. Fold the wrapper in half to create a crescent shape and pinch the edges to seal. Create pleats along the sealed edge for a decorative touch. Repeat until all filling is used.

    Cook the Gyoza

    Heat a non-stick skillet over medium heat and add a small amount of oil. Once hot, add the gyoza in a single layer and cook for about 2-3 minutes until the bottoms are golden brown. Carefully add 100 ml of water to the skillet and cover immediately. Steam the gyoza for about 5-7 minutes, or until the water has evaporated and the gyoza are cooked through.

    Serve

    Remove the lid and let the gyoza cook for an additional minute to crisp up the bottoms. Serve hot with housemade gyoza sauce.
