1. Prepare the Chicken

In a bowl, combine buttermilk, cayenne pepper, paprika, garlic powder, onion powder, salt, and black pepper. Add chicken breasts and marinate for at least 1 hour or overnight in the refrigerator.

2. Coat the Chicken

In another bowl, mix together the flour and cornstarch. Remove chicken from marinade, letting excess drip off, and coat each piece in the flour mixture.

3. Fry the Chicken

Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

4. Make the Cayenne Ranch Mayo

In a small bowl, combine mayonnaise and hot sauce. Mix well to create the cayenne ranch mayo.

5. Assemble the Sandwich

Toast the brioche buns. Spread a generous amount of cayenne ranch mayo on both halves of the buns. Place fried chicken on the bottom half, top with lettuce, pickles, and crispy fried onions. Close with the top half of the bun.

6. Serve

Serve the sandwiches with your choice of side and a medium drink.
