Focaccia Preparation

Make the Dough
In a large bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy. Add flour, olive oil, salt, and fresh rosemary. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let it Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape and Rest
Preheat the oven to 425°F (220°C). Punch down the dough and spread it out on a greased baking sheet. Let it rest for an additional 20 minutes.

Add Toppings
Dimple the surface of the dough with your fingers, drizzle with olive oil, and sprinkle with additional rosemary and salt.

Bake in the preheated oven for 20-25 minutes or until golden brown.
Smoked Pimento Cheese Preparation

Mix Ingredients
In a bowl, combine cream cheese, sharp cheddar cheese, smoked paprika, garlic powder, diced pimentos, salt, and black pepper. Mix until smooth and well combined.

Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.

Slice the focaccia into squares and serve warm with a side of smoked pimento cheese and a drizzle of Sicilian olive oil.
