Bread Preparation
Activate the Yeast
In a small bowl, combine warm water (about 110°F or 43°C) with honey and yeast. Let it sit for about 5-10 minutes until frothy.
Mix the Dough
In a large mixing bowl, combine the flour, salt, and chopped rosemary. Add the activated yeast mixture and olive oil. Stir until a dough forms.
Knead the Dough
Turn the dough out onto a floured surface and knead for about 10 minutes until smooth and elastic.
First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
Shape the Bread
Punch down the risen dough and shape it into a loaf. Place it in a greased loaf pan or shape it into a round and place it on a baking sheet.
Second Rise
Cover the shaped dough and let it rise again for about 30-45 minutes.
Preheat the Oven
Preheat your oven to 375°F (190°C).
Bake the Bread
Once the dough has risen, bake it in the preheated oven for about 30-35 minutes, or until golden brown and sounds hollow when tapped.
Cool and Serve
Remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
