Prepare the Pork Shank

Preheat the oven to 325°F (163°C). Season the pork shanks with salt and pepper on all sides. In a large, oven-safe pot, heat olive oil over medium-high heat. Sear the pork shanks until browned on all sides, about 8-10 minutes. Remove the shanks and set aside.

Sauté Vegetables

In the same pot, add garlic, onion, carrots, and celery. Sauté for about 5 minutes until softened.

Braise the Pork Shank

Return the pork shanks to the pot, add chicken broth, thyme, and bay leaves. Bring to a simmer, then cover and transfer to the oven. Cook for 2 to 2.5 hours until the meat is tender.

Make the Mushroom Demi-Glace

In a separate pan, melt butter over medium heat. Add sliced mushrooms and cook until browned, about 5-7 minutes. Stir in flour and cook for another minute. Gradually whisk in red wine and bring to a simmer. Let it reduce for about 10 minutes until thickened.

Serve

Remove the pork shanks from the oven. Serve over cooked rice, topped with mushroom demi-glace.
