Cooking Instructions

  1. 1

    Prepare the Lemon Dill Oil

In a small bowl, mix olive oil, lemon juice, and chopped dill. Set aside.

  2. 2

    Season the Cod

If using the blackening spices, mix paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper in a small bowl. Rub this mixture all over the cod fillets.

  3. 3

    Broil the Cod

Preheat the broiler. Place the seasoned cod fillets on a baking sheet lined with foil. Brush the lemon dill oil over the fillets. Broil for about 6-8 minutes, or until the fish flakes easily with a fork.

  4. 4

    Grill the Cod

Alternatively, preheat a grill to medium-high heat. Grill the blackened cod fillets for about 4-5 minutes on each side, or until cooked through.

  5. 5

    Serve

Remove the cod from the heat and serve immediately, drizzling any remaining lemon dill oil over the top.
