Marinate the Chicken
In a bowl, combine chicken breast with soy sauce, ginger, garlic, and citrus juice. Marinate for at least 30 minutes.

Prepare the Vegetables
While the chicken is marinating, blanch the broccoli and carrots in boiling water for 2-3 minutes, then drain and set aside.

Cook the Chicken
Heat a pan over medium heat. Add the marinated chicken and cook until no longer pink, about 6-8 minutes. Remove from heat and let it rest for a few minutes before slicing.

Make the Peanut Sauce
In a small bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, minced garlic, minced ginger, citrus juice, and water until smooth.

In a large bowl, combine sliced chicken, blanched broccoli, and carrots. Drizzle with peanut sauce and toss until everything is well coated.

Top with won-ton strips for crunch and serve immediately.
