Prepare the Ingredients
Begin by dicing the onion, chopping the sun-dried tomatoes, and dicing the Roma tomatoes. Set aside.

Cook the Bacon
In a large skillet over medium heat, cook the bacon until crispy. Remove from the skillet and set aside on paper towels to drain.

Sauté the Onion
In the same skillet, remove excess bacon grease, leaving about 1 tablespoon. Add the diced onion and sauté until translucent, about 3-4 minutes.

Cook the Chicken
Push the onions to one side of the skillet and add the chicken breasts. Cook for 5-7 minutes on each side or until fully cooked and no longer pink in the center.

Combine Ingredients
Once the chicken is cooked, add the corn, sun-dried tomatoes, Roma tomatoes, and cooked bacon to the skillet. Drizzle with balsamic vinaigrette and mix well.

Add Cheese
Sprinkle grated Parmesan cheese over the top of the mixture and let it cook for an additional 2-3 minutes until the cheese melts.
