Method

For the Beef Brisket

    Prepare the Brisket

    Preheat the smoker to 225°F (107°C). Trim any excess fat from the brisket.

    Make the Rub

    In a bowl, mix together brown sugar, smoked paprika, garlic powder, onion powder, black pepper, salt, and liquid smoke.

    Season the Brisket

    Rub the whiskey over the brisket and then coat it evenly with the spice mixture.

    Smoke the Brisket

    Place the brisket in the smoker and smoke for about 1 hour per pound, or until the internal temperature reaches 190°F (88°C).

    Rest the Brisket

    Remove from the smoker and let rest for at least 30 minutes before slicing.

For the Sautéed Spinach

    Sauté the Garlic

    In a large pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Add the Spinach

    Add the fresh spinach to the pan and cook until wilted, stirring frequently. Season with salt and pepper to taste.

For the Cheddar Mashed Potatoes

    Boil the Potatoes

    Peel and chop the russet potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, and cheddar cheese. Mash until smooth and creamy. Season with salt and pepper to taste.
