For the Beef Brisket

Prepare the Brisket
Preheat the smoker to 225°F (107°C). Trim any excess fat from the brisket.

Make the Rub
In a bowl, mix together brown sugar, smoked paprika, garlic powder, onion powder, black pepper, salt, and liquid smoke.

Season the Brisket
Rub the whiskey over the brisket and then coat it evenly with the spice mixture.

Smoke the Brisket
Place the brisket in the smoker and smoke for about 1 hour per pound, or until the internal temperature reaches 190°F (88°C).

Remove from the smoker and let rest for at least 30 minutes before slicing.

Add the fresh spinach to the pan and cook until wilted, stirring frequently. Season with salt and pepper to taste.

Peel and chop the russet potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.
