    Prepare the Home Fries

    In a skillet, heat some olive oil over medium heat. Add diced potatoes and cook until golden brown and crispy. Season with salt and pepper, then set aside.

    Cook the Chorizo

    In the same skillet, add the chorizo and cook until browned and fully cooked. Remove from heat and drain excess fat.

    Sauté Vegetables

    In the same skillet, add diced onions and bell peppers. Sauté until softened, about 5 minutes.

    Scramble the Eggs

    In a bowl, whisk the eggs and season with salt and pepper. Pour into the skillet with the sautéed vegetables. Cook, stirring gently, until the eggs are scrambled and cooked through.

    Combine Ingredients

    Add the cooked chorizo and cheddar cheese to the scrambled eggs and stir until the cheese melts.

    Assemble the Burrito

    On a large tortilla, spoon the egg and chorizo mixture, followed by a scoop of home fries and a spoonful of pico de gallo. Roll the tortilla tightly to enclose the filling.
