    Prepare the Potatoes

    Wash and dice the potatoes into small cubes. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden and crispy. Remove from heat and set aside.

    Cook the Steak

    Season the New York strip steaks with salt and black pepper. In the same skillet, add another tablespoon of olive oil over high heat. Once hot, add the steaks and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the skillet and let them rest for a few minutes.

    Fry the Eggs

    In a separate pan, melt the butter over medium heat. Crack the eggs into the pan and cook them to your liking (sunny-side up, over-easy, or scrambled). Season with salt and pepper.

    Toast the Bread

    While the eggs are cooking, toast the bread slices until golden brown.

    Plate and Serve

    On each plate, arrange the home fries, place the cooked steak, and top with eggs. Serve with toast on the side.
