Directions

  1. 1

    Prepare the steak

Season the steak with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the steak for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness. Remove from heat and let it rest for a few minutes, then slice thinly.

  2. 2

    Cook the eggs

In the same skillet, add another tablespoon of olive oil if needed. Crack the eggs into the skillet and cook to your liking (sunny side up, over easy, etc.). Season with salt and pepper.

  3. 3

    Warm the beans

In a small pot, heat the black beans over medium heat until warmed through. You can season them with a pinch of salt if desired.

  4. 4

    Assemble the tostadas

On each tostada shell, layer the black beans, sliced steak, avocado (sliced or mashed), and cheddar cheese. Top with a fried egg and a generous spoonful of tomatillo salsa.

  5. 5

    Serve

Serve immediately while warm, and enjoy your steak & egg tostada!
