Prepare the Clarified Mezcal
Start by clarifying the mezcal. Mix 2 oz of mezcal with 0.5 oz of lactose in a shaker and let it sit for about 30 minutes. Strain through a coffee filter to remove solids.

Mix the Cocktail
In a cocktail shaker, combine the clarified mezcal, lemon juice, lime juice, simple syrup, and ice. Shake well until chilled.

Strain and Layer
Strain the mixture into a chilled glass filled with ice. Slowly pour the Cabernet Sauvignon over the back of a spoon to create a layered effect.

Garnish and Serve
Garnish with a lemon twist on top and serve immediately.
