Prepare the Pulled Pork
In a slow cooker, place the heritage pork shoulder and season it with onion, garlic, apple cider vinegar, brown sugar, smoked paprika, cayenne pepper, salt, and black pepper. Pour water over the pork.

Cook the Pork
Cover and cook on low for 8-10 hours, or until the pork is tender and shreds easily.

Make the Coleslaw
In a large bowl, combine shredded cabbage and grated carrots. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Pour the dressing over the cabbage and carrots, and toss to combine.

Shred the Pork
Once the pork is cooked, remove it from the slow cooker and shred using two forks. Return the shredded pork to the slow cooker to soak up the juices.

Assemble the Sandwiches
Split ciabatta rolls and fill with a generous amount of pulled pork and top with coleslaw. Serve immediately.
