    Prepare the Home Fries

    Peel and dice the potatoes into small cubes. Finely chop the onion.

    In a large skillet, heat 1 tablespoon of butter or olive oil over medium heat. Add the diced potatoes and onion, season with salt and pepper, and cook for about 15-20 minutes, stirring occasionally, until golden brown and crispy. Set aside.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of butter or olive oil. Add the mixed mushrooms and sauté for 3-4 minutes until they are soft.

    Add the spinach and cook for an additional 2-3 minutes until wilted. Remove from heat and set aside.

    Make the Omelette

    In a bowl, whisk together the eggs, milk, salt, and black pepper.

    In the skillet, pour the egg mixture over the sautéed mushrooms and spinach, tilting the pan to spread it evenly. Cook on low heat until the edges start to set.

    Using a spatula, gently lift the edges and allow uncooked egg to flow underneath. Once mostly set, fold the omelette in half and let it cook for another minute.

    Slide the omelette onto a plate and serve with the home fries on the side.
