Directions
- 1
Prepare the Ingredients
Rinse the rapini and trim off the tough ends. Mince the garlic cloves and set aside. Drain and rinse the white beans.
- 2
Sear the Salmon
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt, black pepper, and lemon juice. Place the salmon skin-side down in the skillet and sear for about 4-5 minutes until golden brown. Flip and cook for another 3-4 minutes or until the salmon is cooked through. Remove from the skillet and set aside.
- 3
Cook the Rapini and Beans
In the same skillet, add the remaining olive oil, minced garlic, and rapini. Sauté for about 3-4 minutes until the rapini is tender but still vibrant green. Add the drained white beans and fresh thyme, and cook for an additional 2-3 minutes until heated through. Season with salt and black pepper to taste.
- 4
Serve
Plate the rapini and white bean ragout, and top with the seared salmon. Drizzle with additional lemon juice if desired.
